
I don’t know about you, but sometimes in the winter I get stumped on what to eat. There are certain fruits & vegetables seasonal to winter that I want to try to take advantage of. But, it’s hard for me to always think outside the box with regards to the winter season. I mean, who wants to eat soup all the time?
So, I started trying to find as many seasonal (and healthy) recipes that can spice up any winter diet. Some are gluten-free, some are vegetarian and/or vegan. But, the main purposes are healthy and tasty.

1. Vegan Carrot Cupcakes

These cupcakes look delicious and look to be the perfect healthy dessert that is tummy and kid-friendly!
2. Smoky Collard Greens

I LOVE collard greens, but sometimes they can be cooked in a not-so-healthy way. This recipe is healthier and is vegetarian friendly.
3. Kale Quinoa Patties
Kale has a very bitter taste and can easily turn some people away. These seem to be a perfect way to try kale if you’re new to it.

Yummy! Sweet potatoes can be a better choice than a white potato and fortunately you can hook it up to be just as tasty – with better substitutes!
5. Baked Rosemary Beet Chips

I can’t tell you the last time I even had a beet, they are not exactly my favorite vegetable. I can, however, be totally convinced to snack on these chips.
6. Pear Quesadillas

7. Carrot, Date, Apple & Spice Muffins

8. Creamy Passion Fruit Popsicles

Who says you can’t have popsicles in the winter? These popsicles are dairy free, low carb, and paleo friendly!
9. Maple Balsamic Roasted Brussels Sprouts

Brussels sprouts don’t taste bad per se, they just taste bland to me. So, this recipe easily perks them up in a sweet & salty way.
10. Turnip French Fries
Lol, when I was little I thought turnips were a non tasty version of sweet potatoes. Then, I realized they were indeed two different vegetables. Who knew you could turn them into french fries?
11. Pomegranate Guacamole

We all heard by now that avocados are good for you, but now you can take it up a notch and add pomegranates to your guacamole – adding just a touch of sweetness.
12. Roasted Broccoli with Orange

Broccoli is probably one of my favorite green vegetables. You can’t seem to go wrong with it. I bet it’s even tastier with the orange flavor added!
13. Oven Roasted Garlic Cabbage

Cabbage makes a great side dish for any meal. This recipe is as simple as you can get with only four ingredients!
14. Kale & Asian Pear Salad

Salads can be boring sometimes, but pairing kale with asian pears will surely add some zing!
15. Broiled Grapefruit with Honey and Bananas

I don’t know about you, but I don’t eat grapefruit all that often. If you don’t either this recipe can be a very interesting way to reintroduce it.

Thanks for the new ideas! I especially like the baked sweet potato loaded with Mexican food–we will be trying that for sure!
Here’s what my family ate for dinner every night last February–pretty typical of our winter meals, except that we did not make Honey Baked Lentils which is a really awesome recipe: comfort food, super-easy to make from affordable shelf-stable ingredients, and baking it warms up the house!
