As I was going down the frozen fruit aisle in the grocery store I came across some rhubarb. The thought of adding rhubarb to a smoothie sounded interesting.
Once I got home I remembered I had a 7 Grain non dairy substitute in the freezer. Hmmm, perhaps I’ll thaw it out and try it in the smoothie, too (lol, that’s what I said to myself). I never tried a whole grain blend, nor rhubarb for that matter, so I wasn’t sure what the smoothie would taste like.
Well, let’s just say it was delicious! Rhubarb and a new non dairy substitute – two “firsts” at once!

This recipe makes 1 serving.
What you’ll need:
- 1/2 cup frozen rhubarb
- 1/2 cup frozen berry mix (my mix had cherries, blueberries, blackberries, and strawberries)
- 1 1/4 cup of 7 Grain Non-Dairy Beverage (Pacific Natural Foods)
Combine all ingredients in a blender or magic bullet – blend until smooth. Enjoy!
