I never thought I could eat pumpkin so much as I have this year.
For some reason I have been inundated with so much pumpkin.
Oh well. Tis the season for pumpkins!
When I made the Pumpkin Nice Cream last week I still had 1 1/2 cups of pumpkin puree leftover. One and half cups, of course, is not enough for anything big, like muffins or anything. BUT, it was enough to make this smoothie.
When in doubt make a smoothie! That’s my motto!
Think of it as another way to get some fiber in!
So get to carving your pumpkin and dig in to that puree!
What you’ll need:
- 1 1/2 cups pumpkin puree
- 1/2 cup rice milk
- 1/2 cup frozen mangoes
- small dash of ground cinnamon
- 1/4 cup frozen pineapple
- 1/2 tsp vanilla extract
Blend all ingredients together in a high speed blender until smooth.
